The Chocolate and the Skunk
August 16, 2010
Thank god I made chocolate ice cream yesterday. Yes, that’s right, thank god, because right now, that’s the only way I’m staying awake! Not only was I excited about eating my almond butter cups (from a few blogs back) and putting them in a bowl with the vanilla ice cream I made last week but I am now thinking that I must have known I was going to need even more chocolate then that today.
Here’s the recipe for the Vanilla. There is a huge chapter on ice creams in the new book.
Vanilla Ice Cream
2 cups cashews
2 cups tightly packed coconut meat
4 cups coconut water
4 vanilla beans, split in half lengthwise and seeds scraped
1 cup agave nectar
1. Combine all of the ingredients in a Vita-Mix. Blend until completely smooth, there should be no lumps. Once the ingredients are blended in the Vita-Mix, carefully remove the lid machine while is running. The ingredients won’t splatter. Using a spatula, push the mixture around to make sure it’s smooth. Replace the top before turning machine off.
2. Pour into an ice cream maker and freeze according to manufacturer’s directions. Serve immediately or freeze.
Dennis takes the dogs to the beach every morning. Usually pretty early, around 4:30 or 5:00. This morning he was playing golf so he took the boys super early, before 4 am. I know, crazy early. They go rain, sleet and snow. Anyway, this morning when they got home and jumped onto the bed with me, they stunk! Dennis was following them up the stairs to tell me they got sprayed by a skunk. I stayed up last night to get some work done, even though I was so tired after the concert, I figured I could sleep late today. AUGH! Here’s the scene of the crime in the bathroom. My little one got it right in the face. I bathed him in apple cider vinegar, then Dr. Bronners with essential oils added. It was too early to go to the store to get tomato juice so he dried off and then we started again two hours later. This time with white vinegar, tomato paste and tomato juice. He still smells! Anyone have any other natural remedies?
