Raw Green Soup

Wednesday, January 22nd, 2014

Ive been making a raw green energy soup in the mornings lately instead of my raw food smoothies.
This is the one I made this morning. You can alter the spices and seasonings to your liking.
Raw Energy Soup
Kale
Collards
Swiss chard
Celery
Bock choy
Cucumber
Sunflower greens
Lime juice
Avocado
Ginger
Turmeric powder
Cayenne powder
Cumin Powder
Dulse
greens
In a blender or food processor, blend all of the ingredients except the Dulse, until smooth. Once this is blended well, add the Turmeric, Cayenne and Cumin and blend again. Pour into a large bowl and add Dulse pieces. I like using a vitamix so it comes out really smooth and creamy.

Raw Peppermint Brownie’s

Thursday, January 2nd, 2014

For New Years Eve, I made some raw food to bring to a friends. The dessert was Raw Peppermint Brownies.

I adapted the brownie recipe from Raw Food for Everyone. Actually, the brownie part is still the same but I made a peppermint frosting instead of the chocolate sauce topping.

Brownies – Makes 20
2 cups pecans
2 cups walnuts
2 cups hazelnuts
4 cups cacao powder
4 cups pitted dates
1½ cups agave nectar

1. Put 1 cup pecans, walnuts, and hazelnuts in a food processor. Blend until finely ground. Remove the ground nuts and transfer to a bowl, then repeat with remaining nuts. Put the cacao powder into the food processor and pulse a few times to get rid of any lumps. Add the cacao to the ground nuts and stir to combine.
2. Put the agave and dates in a food processor (no need to wash it). Blend until a coarse paste forms. Remove to another bowl.
3. Put 1/3 of the nut mixture and 1/3 of the date mixture in a food processor (again, no need to wash it). Pulse for about 30 seconds until the mixture is crumbly and moist. Transfer a bowl. Repeat two more times. When are three batches are in the bowl, mix well.
4. Evenly spread the brownie batter into an 11-inch x 7-inch pan. You can cut the brownies immediately into large or small pieces, or cover and store at room temperature for 5 to 7 days

For the frosting:

1 cup coconut butter
1/2 cup coconut oil
2-3 drops of essential oil of peppermint or use a peppermint extract

I used a small blender to blend it all and melt it together. When this is nice and creamy, spread it over the top of the brownies. You can put it in the fridge to harden but then I left it out at room temperature and it was creamier.

Enjoy!

Paleo with Raw Food

Wednesday, August 14th, 2013

Although this book is not a raw food book, the Paleo Cookbook For Dummies by Dr. Kellyann Petrucci has just been published and she has included some of my raw food recipes in it! She is very much into the health benefits of eating raw. So if your paleo or easing your way into raw, this may be a great book to check out!

Marinated Raw Plantains

Thursday, April 11th, 2013

My sister, Stacie, is here from Florida to help me with my April Raw Food Certification class that starts Friday. Its 5 days of non-stop set up for the class but she is finally over at the retreat house prepping food with 4 other amazing raw food helpers today. Its always an incredible experience meeting the people who come to the class. I think the furthest person coming to this one is Seoyull from Korea! Its always a life shifting experience for them and for me. I’m ready to be in the bubble of bliss that is created from each class! Ill be tweeting pictures throughout the weekend so make sure you follow me on twitter!

Stacie made these incredible plantains yesterday for us that are so easy to make and really unique. Just make sure you use really ripe plantains or they won’t taste good at all:

A couple of VERY RIPE plantains

Melted coconut oil

cinnamon

curry

Pinch of sea salt

Slice the plantains into bit size pieces like you would a banana.Pour some melted coconut oil over the plantains. Use enough melted coconut oil to coat the plantains. Mix them around in the coconut oil and then sprinkle a large amount of cinnamon, curry and sea salt on them to coat them really well. They should look brownish-orange from the spices. Let sit and marinate for at least an hour. Enjoy!

4th day of Advanced Raw Prep with Leah Dubois added to Alissa’s Level 3 Raw Food Teacher Training!

Tuesday, February 26th, 2013

Whether your looking for a career in Raw Food or just interested in learning more for yourself or loved ones, Alissa’s level 3, Living on Live Food Teacher Certification, will prepare you for your next step in your raw food journey.

Alissa has been eating and teaching the raw vegan lifestyle since 1986.

She has been living this lifestyle since then and she was one of the first to begin a Certification Program in this field.

Alissa has added a 4th day for the Level 3 Teacher Training! We are so excited to have Leah Dubois, Alissa’s chef from her restaurants, Grezzo, and co-author of Raw Food for Everyone, teaching a full day of advanced raw food prep on Monday attached to the level 3 Teacher Training. This 4th day of training with Leah will be included in the cost of the Level 3 Teacher Training! Please read below for more information about this day.

After taking Alissa’s level 3 Teacher Training, many of our students teach classes, open restaurants and wellness centers, cater, become personal chefs, write books, consult and make an abundant living doing what they love! Many students come to class just to learn how to take care of their families, friends and communities by sharing Alissa’s raw food philosophy.

Alissa Cohen’s Level 3 Certification courses are designed to open up a whole new world for you by giving you the knowledge and training to become a certified Living on Live Food Chef, Instructor and Teacher.

(you can view video testimonials here from Alissa’s students!)

Both newcomers and experienced participants feel comfortable in Alissa’s class.

The program is designed to help you reach your personal and professional goals. After taking this course, you can venture into your own raw food business or you can join Alissa and be part of her team! You will be able to teach others how to become healthy and vibrant through individual one-on-one teachings or with groups by teaching Alissa’s Level One and Level Two classes.

Many people, after taking Alissa’s classes, choose to create their own raw food business without teaching Alissa’s Level One and Level Two classes. Some teach an occasional class and others teach many Level One and Level Two classes. It is totally up to you! Alissa offers these bonuses as a way to get people started on their raw food path without having to reinvent the wheel and for people who do not want to be out on their own but part of a bigger community.

The only way to become a level 3 Teacher is to be trained directly by Alissa in this 4 day class. In this 4 day Teacher Training, you will be certified as a Level 1 Chef, Level 2 Instructor and Level 3 Teacher. There is no prerequisite to this training as it is an intensive that will cover all three levels.

Garnishing and finishing plates will also be covered as well as tips on recipe building, ingredient substitutions, finding unique products, adapting meals to different situations, etc…

Gourmet meals and a celebratory dinner included.

This is an extremely unique opportunity to study with Leah Dubois. A truly one of a kind experience!

(At this time, the only dates we have available for this extra day of training with Leah is for the 3 Mondays following the level 3 training dates in 2013. We offered this day a few years ago when Alissa had the restaurant in Boston and it was such a huge success that we were turning people away just weeks after announcing it.  We do not know if this extra day will be available after the 2013 teacher Trainings.)

Imagine … making money AND doing what you love, while helping people and spreading the word about raw food!

Win an Excalibur Dehydrator! And… This Weeks Super Special!

(Don’t worry, if your already signed up, your automatically entered!) This sweepstakes is running now until May 8th. So sign up now! Read more about signing up here.

And if your already signed up to receive my weekly specials, here is today’s  which just started and will end tomorrow the 27th.

The collection of products in this Living Intentions bundle really hit the mark when it comes to taste! No joke, the Hemp & Greens cereal is one of the best things I’ve ever tasted. I ate the entire bag in one sitting! It’s packed with greens so you wouldn’t know it to look at it (I mean, green cereal can look a little weird, I know), but you’ll be shocked at how good it is.

Their two versions of Gone Nuts have SO much flavor. They’re actually a little spicy; I don’t like wicked hot, but these are just right. The sprouted pumpkin seeds have great saltiness to them so I use them as a snack straight out but you can also put them into a salad or mix them with dried fruits like goji berries and cacao nibs for a super-health trail mix.

I know, I’m going on and on, but that’s how good this stuff is! Lastly there’s the Original Salad Booster – this is really cool. When you’re making a salad, even though the raw veggies are nutritious, this is packed with things like spirilina and chlorella that you wouldn’t normally get that are so essential. It’s like a grain with nice salty, briny kick to it that gives a serious boost to your salad. You can also put it into raw soups, on top of sprouted grains…lots of stuff.

Once you get a taste of these, I’m sure you’ll come up with a lot of other ideas for how to use them!

The Details

  • Cilantro Lime Pistachios & Pepitas 3.5oz
  • Rosemary Garlic Pistachios & Almonds 3.5oz
  • Hemp & Greens, Superfood Cereal 9oz.
  • Chia Ginger, Superfood Cereal 9oz.
  • Salad Booster, Original 3oz.
  • Sprouted Pumpkin Seeds, Himalayan Salted 8oz.
