8 vegetables that are healthier than kale

Watercress.

It’s no stretch to say that the past few years have been all about kale.

Of all the vegetables out there, watercress is the most nutrient-packed per serving. These greens are high in nitrate, which improves oxygen performance during exercise and lowers blood pressure. Watercress contains a ton of vitamin K, vitamin C, vitamin A and beta carotenes. It’s also the best food source of PEITC, a naturally-occurring compound that has been shown to suppress the development of breast cancer. Calorie for calorie, you can’t get any better than watercress.

Collard Greens.

This southern food staple contains more calcium and double the amount of protein and iron in comparison to kale. Collard greens also beat kale in terms of cholesterol-lowering, and beat kale sevenfold when it comes to folate content.

Beet Greens.

Beet greens are absolutely loaded with fiber — one serving contains nearly 1/5 of the average daily recommended intake of the stuff. These greens, often relegated to the compost bucket, are also a much better source of potassium, copper, vitamin E and calcium than kale.

Chinese Cabbage.

Chinese cabbage contains essential amino acids that kale lacks. It is also rich in phytochemicals and organic sulfur compounds and antioxidants — the latter of which stay intact when Chinese cabbage cooked, unlike kale.

Spinach

Ah, spinach — the original healthy leafy green. Don’t underestimate the power of this superfood! In comparison to kale, spinach wins out in terms of antioxidants, fiber, iron, magnesium, potassium, vitamin A, protein and vitamin E.

Parsley.

Yep, this humble garnish packs quite the nutritional punch. Per gram, parsley contains 4 times as much folate, over triple the amount of iron and double the amount of fiber and vitamin K in comparison to kale. Another benefit? It’s so much easier to use than kale — many, if not most, meals will benefit from a little sprinkling of chopped parsley.

Chard.

Chard and kale have plenty in common. And, yes, in some ways, kale is healthier than chard. But, chard has almost double the amount of magnesium as its leafy green cousin, and is a better source of iron. And, taken per gram, chard is more nutrient-dense than kale.

Romaine Lettuce.

Surprised to see this on the list? Most notably, romaine lettuce beats kale in its folic acid content, one of the nutrients shown to help alleviate depression. And, like all of the others on this list, the nutritional value of romaine lettuce beats kale gram for gram.

I am sitting at my computer dreaming about Urban Remedies Raw Creme Carmel…If you have never hear of this company or had their products, you have to check them out! The Brownie was also mind blowing as was all of their desserts but I’m also so impressed with their juices!

I never order juice from anywhere thinking that making my own at home is always going to taste better. I’ve had juice from some of the new companies out there and they are ok…good in a pinch. But, these were so amazing! So full of flavor and I felt like they were energetically alive still! I had three different kinds and also an Almond Milk. This was better than what I make. Juice Cleanse

Even on my raw food diet, I’m feeling like I need a cleanse…It’s actually been so long since I’ve don’t a juice fast, so Im starting one today. If you would like to cleanse with me, post a comment here on what you juice, recipe, etc.. maybe we’ll have a bunch of people doing an end of summer fast together!

raw food/ Picked Green Tomatoes!

Leah (my amazing chef from Grezzo when I had my raw food restaurants) came over tonight and picked a bunch of green heirloom tomatoes from my garden and pickled them. Look at these colors!!!!

She added a bunch of spices, fennel, coriander, cinnamon stix, garlic…added apple cider vinager… Can’t wait till they marinate!

I just tried this new coconut opener from Coco-Jack! For those of you who shy away from opening coconuts for fear of slicing your hand off or if you just have a hard time knowing how to cut into them while saving the coconut milk from splashing all over your kitchen counters, you’ll want to check this handy little tool out!

What I really love is the perfect round hole it leaves in the top of the coconut so that you can easily scrape the meat out and you can also close them up if your not going to be using the whole coconut right away. Love the scoop for the meet also!

Ive tried a lot of coconut knives and other gadgets over the years that promised to make opening my Thai baby coconuts a breeze but they never delivered and I have always gone back to my kitchen knives and hatchets. Ive ruined a lot of knives and my hatchet is pretty intimidating for the faint of heart. It can also make a mess.

Love this! The mat and the bag are pretty cool also… you can buy just the Coco-Jack and a mallet or bundles.
