This is such a quick and easy dessert recipe, but make sure you grind the cashews really well. You want the texture to be super smooth and not grainy.
1 cup cashews
3 medjool dates
1 t vanilla
1 pinch sea salt
1 – 2 T cacao nibs
Place the cashews in a food processor or blender and blend until its a fine powder and almost a butter consistency. Add in the the dates, vanilla and sea salt and blend until well ground. (sometimes I blend the dates separately until its a date paste and then mix it into the cashews by hand if Im using my little blender so that there are no date pieces and its smooth and creamy.)
When mixture is all blended, add in the cacao nibs by hand.
Roll these into little balls and bliss out.
