If you have Living on Live Food, then you know my love of simple, easy, raw food recipes. I’ve been whipping up these little nuggets for an after dinner treat. I made them up one night when a friend said she wanted something sweet but different. The nutmeg and fresh grated ginger make them unique.
2 cups pecans
5 dates, pitted
½ T fresh grated ginger
1 T nutmeg
½ T cinnamon
½ T vanilla
Pinch of sea salt
Place the pecans in a food processor and blend until almost a past.
Add the dates. If your dates are not super soft, soak them in water for a couple of hours first or make a date paste by blending just the dates alone in the food processor first. Otherwise the dates will not blend well and you will have chunky pieces of dates instead of a smooth doughy ball. Add in the ginger, nutmeg, cinnamon, vanilla and sea salt. Blend until creamy and smooth.
Remove from food processor and roll into balls. Drop into shredded coconut to coat.
Refrigerate for a few hours to help them solidify a bit.
