Raw Parsley Salad

I was going to call this End of Summer Salad since its filled with all of my veggies fresh from the garden or Raw Tabouli Salad, but since there are no grains in this, I decided on Parsley Salad since its loaded with parsley. 

Parsley is rich in minerals and is very cleansing and detoxifying. This simple salad can be altered and switched up with any veggies that you like. You can also make one of your favorite raw salad dressings and use that. I just used olive oil and sea salt.


1 Lg cucumber, diced

1 Lg zucchini, diced

Red bell pepper, diced

Sweet onion, diced

Handful of cherry tomatoes or large tomato, diced

2 lg bunches parsley, chopped fine

2+ t Himalayan salt or sea salt

4+ T good quality olive oil

(I’ve also added garden salsa peppers, diced. So if you like spicy, try that!)

Dice the veggies and toss in a bowl.

Add salt and olive oil and toss again. Allow to marinate for an hour or two if possible. Adjust the amount of olive oil and sea salt according to your taste. You may need more or less depending on the size of your veggies and your palate.
